is the opportunity to discover new flavors and surprising combinations of ingredients. Sometimes it happens serendipitously. Such is the case with my recipe for Kale and Apple Surprise. I had fresh kale in the fridge and wanted to do something different with it. I looked around the kitchen and saw a lone apple in a fruit bowl. It seemed to beckon, “enjoy me.” I thought why not pair it with the kale and see what happens. I’m happy to say the kale and apple combination turned out to be a nutritious, delicious Meatless Monday surprise. Serves 4 as side dish Ingredients:

2 tablespoons extra virgin olive oil2 minced garlic cloves8 ounces of chopped kale with finely julienned carrots (or opt for just kale)1 diced apple (about 1/3 cup)1 tablespoon rice vinegar½ teaspoon salt or to tasteBlack pepper

What to do:

Heat olive oil in a skillet on medium heat.When oil is ready, sauté garlic until slightly golden brown.Add chopped kale with julienned carrot, and sauté for five minutes. Be sure to stir and mix so the vegetable will cook evenly.Add the diced apple.Stir in the vinegar.Mix in salt and pepperContinue to sauté for about three minutes or until apples are slightly soft.Serve and enjoy.
