Peanut Noodles
Whole wheat spaghetti Organic creamy peanut butter Seasoned rice vinegar Reduced-sodium soy sauce Scallions [sidebar] Prepare 8 oz whole wheat spaghetti per package directions. Reserve 1/2 cup cooking liquid and drain pasta in colander. Whisk together cooking liquid, 5 Tbsp organic creamy peanut butter, 3 Tbsp seasoned rice vinegar, 1 Tbsp reduced-sodium soy sauce, and 1/2 cup chopped scallion greens. Add to pasta, tossing to combine well. Divide among 4 serving bowls and top with 1/4 cup slivered scallion greens. Serves 4.
